A scientist investigated the effect of a competitive amylase inhibitor, acarbose, on the rate of starch digestion by human pancreatic amylase.

In the experiment, the scientist:

  • Mixed 2 cm32\text{ cm}^32 cm3 of 1%1\%1% starch solution with 1 cm31\text{ cm}^31 cm3 of human pancreatic amylase solution.

  • Maintained the mixtures at a constant temperature of 37∘C37^\circ\text{C}37∘C and a pH of 7.07.07.0.
  • Extracted samples every 5 seconds and added them to iodine solution in a spotting tile to find the exact time when starch was completely digested.

The investigation was repeated three times for each concentration of the inhibitor. The results are presented in the table below:
