Procedure for making bottled tomato sauce:

  1. Wash and finely chop 3 kg of plum tomatoes.
  2. Simmer the tomatoes with herbs and salt in a large pan until the mixture thickens.
  3. Blend the mixture until smooth and heat back to a boil.
  4. Pour the hot sauce into sterilised glass bottles, leaving a 1.5 cm headspace at the top.
  5. Seal the bottles immediately with airtight caps.

Give one reason for sterilising the glass bottles before filling them with the tomato sauce.
