Question 124

The first loaf on the rack

Text: an original contemporary bakery-feature-style practice extract.

The baker lifted the loaf from the oven and set it on the rack. I waited for the sound I had been promised. Nothing happened. The crust shone under the lights, smooth and still, and the baker turned away to wash a tray.

A little later, a faint crackle travelled across the room. It came and went so quickly that I wondered whether I had imagined it. The baker paused, then smiled without looking up. As we stood listening, another soft tick sounded from the loaf, followed by a longer, papery rustle.

When the baker finally spoke, she said only that the crust was cooling. Nobody moved towards the door. The sounds kept arriving at uneven intervals, and we leaned closer to the rack as though the loaf might have something more to say. By the time the loaf had gone quiet, the room seemed to have been waiting with it.
