The training kitchen

Text: an original contemporary report-style practice extract.

The training kitchen introduced two checks before each session: trainees counted the knives and confirmed that the emergency exit was clear. They did not begin chopping while those checks were underway. Ingredients were weighed afterwards, according to the day’s recipes. The tutor recorded any missing knife before opening a replacement drawer. By the third week, the checks took only a few minutes, but the tutor continued to ask everyone to stop and complete them rather than relying on yesterday’s totals.

From the extract, identify two checks trainees completed before each session.
